Dorian Isenberg professes an all-consuming passion for his métier. Since 2005, this affable innovator has concocted all manner of tempting treats at his eponymous Addison shop, J Dorian Chocolatier. Last year he shipped more than 400,000 truffles – close to 60,000 around Valentine’s Day alone. His best-selling gifts of the season include one-pound heart-shaped boxes made of ultra-mild French and Belgian chocolate, adorned with edible decorations filled with half a pound of truffles. “I learned how to make the boxes from my mentor, Jacques Torres, who taught me how to make chocolate,” says Isenberg.
